Citron velvet

 

INGREDIENTS

• 1kg Ottavi brocciu
• 8 eggs
• 300g sugar
• 1 jar of «Cédratine
et ses tartines»
• 1 jar of candied citron
• 3 teaspoons citron velvet

Recipe

• Separate the egg whites from the yolks.


• Beat the eggs and sugar until pale.


• Add the brocciu, 3/4 of «Cédratine et ses tartines», the candied citron and the citron velvet.


• Beat the eggs until stiff.


• Fold them into the brocciu-egg-citron mixture.


• Pour into a mould.


• Bake for 30 minutes at 180°C
